Makhana is the popped seed of Euryale ferox, a prickly water lily. India grows about 80% of the world's makhana, and Bihar about 85% of India's crop. It is still harvested from the pond bed by hand, roasted in iron pans and popped by hand, then sieved by size into suta grades.
Based in Chapra, Bihar, 130–280 km (straight line) from the processors in Darbhanga, Madhubani and Purnia.
